If I do the /flag show command I get a response that looks like this:

What do the p: r: g: and s: fields mean?

Anomaly is correct. For a bit more info:
p is the id of the player holding the flag (-1 means not held)
r is 1 if the flag was added with +f (mandatory superflags), 0 if it was added with +s or -s (random superflags)
g is the number of times the flag has been picked up
s is 0 if the flag doesn't exist, 1 if the flag is on the ground, 2 if the flag is in a tank, 3 if the flag is in the air (dropped or falling), 4 if the flag is entering the world (dropping in), and 5 if the flag is exiting the world (being zapped).
