I fixed it by deleting the BZFlag folder inside ~/Library/Application Support/
I'd gotten a clue from another thread after I posted the question - apparently the error comes from a munged config file after upgrading from 1.10.
I can run both now - hope this helps.

Looking at the server list at http://my.bzflag.org/serverlist.php I see about a dozen popular servers populated with about 100 players.
